Referred to by some culinary connoisseurs as 'black diamonds' these elusive subterranean gems have been praised and appreciated since ancient times. There is much history to this not so humble fungus, and having long been considered an expensive French delicacy, it has now arrived on our shores.
Acclaimed chef and proprietor of Amis Restaurant at Point Lookout, Peter Roelfes, has sourced tuber melanosporum, a black winter truffle grown in Manjimup in Western Australia, and has created a special food and wine lovers menu incorporating this prized ingredient for a limited time at an affordable price.
The truffles are flown in fresh from the farm of Mr. Al Blakers in the south west of WA. "There is a unique micro climate in the area and the good quality irrigation water needed to sustain an orchard type environment," Mr. Blakers says comparing the climate and growing conditions to the Bordeaux Region in Southern France where truffles thrive. On French farms, pigs are traditionally used to sniff out their location under the surface of the ground, but on the Blakers farm they utilize the keen sense of smell of specially trained dogs for this purpose.
